Definitely go ahead and spay her. The fewer heat cycles she goes through, the less chance for reproductive cancers and/or infections she'll face, which, in turn, will increase her life expectancy.

One thing, she has not gone into heat at all! She is with me 24/7 so I would know I have owned and pet sat many female dogs that have gone into heat. Not a single sign or anything!

hmmm... that's definitely not normal. How old was she when you got her? I know some mares will have a "silent heat" cycle, but never heard of that in a dog. Is it possible she was spayed prior to you bringing her into your life?
